The King of Fats – Extra Virgin Olive Oil
While there are plenty of blogs talking about the differences between one diet and another, there are few posts that address the single most important food that is commonly found as part of the most popular diet plans. Most vegetable oils including olive oil are extracted using modern, stainless steel machinery, that grinds, malaxes and centrifugally separates the oil from the juices in temperature regulated, water-cooled, computer-automated equipment, while many other oils are extracted using chemicals. For example, both canola and soybean oil require a chemical called hexane to be used in order to extract the oil from the rapeseed and soybean plants. Hexane is a chemical solvent and cleaning agent. What is even worse is that many plants used in making canola and soybean oil are also grown using GMO’s which reduces the nutritional content of the plants. We believe this modern approach produces an inferior oil and we are not the only ones that think this way. What makes olive oil so foundational in relation to other vegetable oils is its exceptional nutritional content. It has a balance of both Omega-3 and Omega-6 fats but it is also high in antioxidants such as polyphenols, Vitamin E and Vitamin K, as well as other delicate fats. It is especially high in monounsaturated fatty acids (MUFA), while having a low ratio of saturated fatty acids.
